Ingredientes

  • 4 libras de pollo en piezas
  • 4 tazas de arroz
  • 5 cucharadas de aceite
  • 1 ramita de tomillo
  • 1 ramita de perejil
  • 1 ramita de cilantro
  • 1 ají cubanela en cubos
  • 1 taza de bija
  • 1 pizca de orégano
  • 1 cucharadita ajo majado
  • 3 aceitunas picadas
  • 1 taza de auyama
  • 1 cucharada de azúcar
  • 1 taza salsa de tomate
  • 1/4 taza apio picado
  • Sal y pimienta al gusto

Preparación

  1. Sazonar el pollo con el ají, orégano, ajo, aceitunas, perejil, cilantro, tomillo, pimienta y sal.
  2. Aparte, dorar el azúcar en el aceite e incorporar el pollo (reservar los ingredientes del sazón).
  3. Dorar el pollo por todas partes, tapar y cocinar por 10 minutos, añadiendo cucharadas de agua para que no se pegue.
  4. Luego añadimos los vegetales y las hierbas, el sazón reservado y la salsa de tomate, y movemos.
  5. Añadimos 4 y 1/2 tazas de agua y salpimentamos.
  6. Cuando el agua empiece a hervir, agregamos la bija, el arroz y la auyama, y movemos.
  7. Cuando seque el agua, tapamos y dejamos cocinar a fuego medio-bajo por 15 minutos.
