Arroz salteado con piña

Ingredientes

  • 3 tazas de arroz cocido
  • 1 paquete de tocineta
  • 1 piña entera madura
  • 1 o 2 cebollas rojas cortadas en cubos medianos
  • 1 pimiento morrón rojo cortado en cubos
  • 1 paquete de puerro fino
  • ½ taza de jugo de piña
  • 1½ cucharaditas de curry en polvo o cúrcuma
  • Hojas de cilantro al gusto
  • Aceite de oliva
  • Sal y pimienta al gusto

Preparación

  1. Lavar y cortar la piña por la mitad longitudinalmente, retirar la pulpa y reservar cortada en cubos.
  2. Opcional, llevar las dos mitades de piña sin pulpa al horno por unos 5 minutos boca abajo y reservar.
  3. En una olla o wok agregamos la tocineta cortada en cubos, dejamos cocinar y dorar un poco, y luego agregamos la cebolla.
  4. Una vez cocida, incorporamos la piña en cubos, luego el pimiento morrón y por último el puerro picado; saltear todo bien.
  5. Aparte, mezclar el jugo de piña con el curry o cúrcuma, y reservar.
  6. Agregar el arroz al wok u olla y saltear todo; luego incorporar el jugo.
  7. Mezclar, bajar el fuego y dejar que el arroz tome sabor.
  8. Para finalizar, rellenamos las mitades de piña con el arroz listo y al momento de servir colocamos las hojas de cilantro por arriba.
