Ingredientes

  • 1 Libra de camarones
  • 4 Tazas de arroz cocido (2 tazas de arroz crudo)
  • 3 o 4 Tazas de agua (puede usar también caldo de vegetales o combinar)
  • 4 Cucharadas de pasta de tomate
  • 1 Taza de sofrito (puede usar salsa para tacos)
  • 5 Cucharadas de aceite
  • ¾ De taza de ajíes de diferentes colores cortados en cubitos
  • 3 Dientes de ajo picado
  • 1/4 De taza de apio cortado
  • 1 Cucharada de perejil bien picado
  • 1 Cucharada de cilantro picado
  • 1 Cucharada de salsa picante (opcional)
  • Sal al gusto

Preparación

  1. En una sartén grande sofreír el ajo y los ajíes junto con las hierbas. Salpimentar al gusto. Agregar la pasta de tomate, el sofrito y dejar sofreír un momento más.
  2. Agregar los camarones pelados y el apio y sofreír por unos segundos. Agregar la mitad del agua y dejar hervir.
  3. Cuando el agua hierva, agregar el arroz. Mover el arroz regularmente y agregar agua cuando sea necesario para mantener el nivel del agua hasta que el arroz esté blando, comprobar sal y pimienta y si se usa salsa picante, agregar en este momento.
  4. Se puede hacer con el arroz cocido. Lo que debe hacerse es agregar todo el líquido al sofrito e incorporar el arroz cocido. Bajar el fuego (si se puede tapar mucho mejor) y cocinar por unos 10 minutos. Cuando el arroz esté blando, comprobar sal y pimienta y si se usa salsa picante agregar en este momento.
  5. Se puede añadir al momento de servir un poco más de perejil picadito.
