Ingredientes

  • 2 tazas de arroz
  • 2 libras de pescado blanco cortado en trozos
  • 2 libras de camarones limpios
  • 2 litros de caldo de pescado
  • 1 cucharada pimentón ahumado
  • 2 dientes de ajo triturados
  • 1 pimiento rojo cortado en cubos
  • 1 zanahoria cortada en cubos
  • 1 cebolla cortada en cubos
  • 1 lata pequeña de tomates pelados
  • Aceite de oliva
  • Sal y pimienta al gusto

Preparación

  1. Sazonamos el pescado con sal y pimienta, y reservamos.
  2. En una olla con aceite de oliva sofreímos la cebolla junto con el ajo.
  3. Luego agregamos el pimiento y la zanahoria y cocinamos por unos minutos.
  4. Agregamos el pescado y cocinamos por unos 5 minutos más.
  5. Retiramos el pescado y reservamos.
  6. Añadimos a la olla los camarones, dejamos dorar y echamos el arroz, los tomates y el pimentón.
  7. Mezclamos todo muy bien, añadimos el caldo de pescado.
  8. Dejamos cocinar a fuego lento y de ser necesario agregamos más agua.
  9. Por último, rectificamos de sal y pimienta e incorporamos el pescado reservado, moviendo con cuidado para que no se desbarate mucho.
  10. Debe quedar un arroz acuoso.
