Ingredientes

  • 1 Lomo de atún fresco
  • 2 Cucharadas de salsa de soya
  • ½ Cucharada de vinagre de arroz
  • ½ Cucharada de aceite de sésamo
  • ½ Cucharada de zumo de limón
  • 1 Cucharada de azúcar
  • ½ Cucharadita de jengibre picadito
  • ½ Cucharadita de ajo picadito
  • 1 Manojo de puerro picado
  • Semillitas de sésamo (a su consideración)
  • Aceite de oliva
  • Sal y pimienta al gusto
  • Aguacate (opcional)

Preparación

  1. Secamos bien los filetes de atún, presionando con papel toalla.
  2. Luego sazonamos con sal y pimienta por todos lados.
  3. Ponemos a calentar una sartén de fondo grueso y agregamos un poco de aceite de oliva.
  4. Dejamos calentar y sellamos el atún por ambos lados (cada lado unos 5 a10 segundos).
  5. Luego colocamos el atún dentro de un recipiente de agua con hielo (esto es para detener el proceso de cocción).
  6. Retiramos y reservamos.
  7. Aparte, preparamos la salsa, mezclando la salsa soya con el vinagre, limón, aceite de sésamo, azúcar, jengibre y ajo.
  8. Dejamos marinar por unos minutos.
  9. Colamos nuestra marinada y, ponemos un poco de fondo en el plato.
  10. Sobre la salsa colocamos las láminas de atún sellado, y lo espolvoreamos con un poco de sésamo y puerro.
  11. Puede agregar algo más de salsa por arriba.
  12. Servir frío, y si desea lo puede acompañar con láminas de aguacate.
