Ingredientes

  • 5 onzas de harina
  • 1 pizca de sal
  • 2 onzas de azúcar en polvo
  • 2 onzas de mantequilla a temperatura ambiente
  • 2 yemas de huevo para relleno
  • 1 ½ libras de manzanas peladas y sin corazón, cortadas en rodajas
  • 2 cucharaditas de canela en polvo
  • 5 onzas de azúcar blanca
  • 5 onzas de azúcar parda
  • 1 taza de agua
  • 1/4 litro crema de leche agria

Preparación

  1. Tamizar la harina y la sal sobre una superficie firme y lisa.
  2. En medio de la harina hacemos un hueco y colocamos el azúcar blanca, la mantequilla y las yemas de huevo.
  3. Con los dedos trabajamos y mezclamos bien poco a poco estos ingredientes con la harina.
  4. Amasamos ligeramente, colocamos la masa en un lugar fresco y dejamos reposar por una hora.
  5. Luego se extiende la masa sobre una superficie enharinada formando una capa delgada.
  6. Forramos con la masa el fondo de moldes para tarticos y llevamos al horno a 185ºC por 15 minutos, o hasta que estén doradas.
  7. Sacamos del horno y dejamos enfriar.
  8. Mientras, colocamos las manzanas en una sartén y cocemos poco a poco con el agua, la canela y el azúcar morena.
  9. Cuando las manzanas estén cocidas pero no muy blandas, retiramos una parte para la decoración y el resto se deja hervir hasta formar un puré.
  10. Rellenamos los tarticos con el puré de manzana, decoramos con la manzana reservada, y cubrimos con la crema agria y el azúcar en polvo.
  11. Llevamos al horno hasta que el azúcar caramelice.
