Canelones rellenos en salsa pomodoro al coco

Ingredientes

  • 15 canelones
  • 2 libras de carne de ternera molida
  • 2 zanahorias cortadas en cubitos
  • 5 tomates pelados y cortados en cubos
  • 2 cebollas picaditas
  • 1 lata leche de coco
  • Sal y pimienta
  • 5 hojas de albahaca picaditas
  • 1 cucharada de orégano triturado

Preparación

  1. Cocinamos la pasta siguiendo las instrucciones del empaque y reservamos.
  2. Aparte, cocinamos la carne sazonada con el orégano, albahaca, sal, pimienta, ajo, aceite de oliva, una de las zanahorias picadita y 1 de las cebollas picadita.
  3. Cocinamos bien y reservamos.
  4. Hacemos la salsa:
  5. En una sartén con aceite de oliva sofreímos la cebolla y cuando esté transparente agregamos la zanahoria.
  6. Luego agregamos los tomates y dejamos cocinar por unos 20 minutos.
  7. Salpimentamos y luego agregamos la leche de coco.
  8. Dejamos reducir hasta obtener una salsa bien cremosa.
  9. Rellenamos los canelones con la carne y bañamos con esta salsa.
  10. Llevamos al horno por unos 20 minutos a una temperatura de 250ºC.
