Carpaccio de Remolacha y Naranja

Ingredientes

  • 2 Remolachas cocidas
  • 1 Naranja dulce
  • Hojas de menta
  • Queso feta
  • 1 Cebolla roja laminada y amortiguada
  • Aderezo de Naranja
  • 2 Tazas de jugo de naranja
  • ¼ Cucharadita de hojuelas de pimienta de cayena
  • 1 Cucharadita de vinagre de arroz
  • 1 Cucharadita de miel
  • 1 ¼ Cucharadita de aceite de sésamo
  • ½ Cucharadita de jengibre rallado
  • Puerro picadito

Preparación

  1. En una sartén de fondo hondo y a fuego medio, ponemos a reducir el jugo de naranja hasta que espese (más o menos 10- 15 minutos).
  2. Luego apagamos el fuego y agregamos las hojuelas de cayena.
  3. Dejamos reposar por unos minutos.
  4. Llevamos la reducción de naranja a un recipiente y agregamos el jengibre rallado, mezclamos bien y luego incorporamos el vinagre de arroz, la miel y el aceite de sésamo
  5. Mezclamos bien y reservamos.
  6. Colocamos las laminas de la remolacha en un plato, intercalada con laminas muy finas de naranja, agregamos la cebolla laminada.
  7. Bañamos con el aderezo y por último agregamos las hojas de menta y el queso feta.
