Chuletas de cordero al romero

Ingredientes

  • 1 Rack de chuletas de cordero
  • 2 Cucharadas de aceite vegetal
  • 2 Dientes de ajo majados
  • 1 Taza de vino tinto
  • 1 Cucharadita de hojas de romero fresco
  • 1 Taza de consomé de pollo
  • 2 Cucharadas de mantequilla sin sal, fría y cortada en cubos
  • 1 Cucharada de mostaza en grano
  • 2 Cucharadas de crema de leche
  • Sal y pimienta al gusto
  • 1 Rama de romero por cada chuleta
  • Hilo de cocina

Preparación

  1. Envolver cada chuleta de cordero con una rama de romero, y sazonar con sal y pimienta por ambos lados.
  2. Calentar una sartén y agregar un poco de aceite vegetal.
  3. Cocinar las chuletas por ambos lados, de 3 a 4 minutos por cada lado.
  4. Retirar las chuletas de la sartén y reservar en un lugar templado.
  5. Retirar la grasa de la sartén y reservar.
  6. Agregar 1 ½ cucharadas de esta grasa a la sartén.
  7. Agregar el ajo y dejar cocinar por un minuto.
  8. Incorporar el vino y las hojas de romero, mover para extraer los sabores.
  9. Dejar que el vino evapore y agregar el consomé de pollo.
  10. Dejar reducir a la mitad.
  11. Si se desea, puede colarse para retirar las hojitas de romero.
  12. Volver a llevar al fuego y agregar la mantequilla y la mostaza en grano, y luego la crema de leche.
  13. Por último, sazonar con sal y pimienta.
