Crema de peras y gorgonzola

Ingredientes

  • 1 kilo de peras
  • 250 gramos de queso gorgonzola
  • 1 litro de caldo de verduras
  • 400 ml de crema de leche
  • 100 ml de brandy
  • 40 gramos de nueces
  • Sal al gusto
  • Pimienta blanca recién molida (opcional)

Preparación

  1. Pelar y cortar las peras a su gusto. Colocarlas en una sartén y saltear ligeramente con mantequilla.
  2. Agregar el caldo, dejar hervir de 5 a 10 minutos. Luego agregar la crema de leche y el queso gorgonzola, salpimentar (al gusto) y dejar al fuego por 5 minutos más, o hasta que todos los ingredientes estén bien unidos.
  3. Dejamos refrescar y procesamos estos ingredientes en una batidora, agregando el brandy. Una vez todo esté bien mezclado, servimos.

  5. Colocamos en el centro del plato un poco de nueces tostadas y picadas y un poco del queso gorgonzola desmenuzado, y agregamos por encima la crema de peras.
  6. Se puede servir fría o caliente.
