Ingredientes

  • 500 gr de atún, preferiblemente fresco
  • 1 pimentón rojo
  • 2 ajíes
  • 1 cebolla
  • Cilantro fresco al gusto
  • Aceite de oliva un chorrito
  • Aceite para freír
  • 1 hoja de laurel
  • 1 huevo
  • 1 taza Pan rallado
  • 3 cucharadas de Harina de trigo
  • Sal y pimienta al gusto
  • Tres cucharadas mantequilla

Preparación

  1. Si el atún es fresco debe cocerse en agua hirviendo con una hoja de laurel hasta que se cocine.
  2. Cuando esté listo, dejar enfriar y luego desmenuzar.
  3. En una olla preparar un espesante Roux,mezclando harina y mantequilla en parte iguales.
  4. En un sartén caliente, añadir aceite de oliva y sofreír la cebolla, el pimentón y los ajíes, después incorporar el atún desmenuzado.
  5. Cocinar por 5 minutos, poner el cilantro fresco picado y salpimentar.
  6. A esta preparación se debe agregar el espesante Roux y revolver hasta que la mezcla sea homogénea.
  7. Amasar en forma de cilindros pequeños o bolitas, como se prefiera, y empanizar pasando primero por harina, luego por huevo y por último en pan rallado.
  8. Poner a freír en abundante aceite caliente, escurrir.
  9. Se puede servir con salsa tártara.
