Croquetas de pollo

Ingredientes

  • 2 Libras de pechuga de pollo
  • 4 Cdas. de mantequilla
  • 1 Cebolla blanca rallada
  • 3/4 Taza de harina de trigo
  • 2 Tazas de leche
  • ¼ Cdta. de nuez moscada
  • 1 Taza del líquido de la cocción del pollo
  • 2 Cdas. de perejil picado
  • 2 Huevos batidos
  • 2 Tazas de pan rallado
  • Aceite para freír

Preparación

  1. En una olla profunda colocar el pollo y cocinar con una taza de agua, el ajo, la cebolla, el apio, el laurel, sal y pimienta, tapar y después de cocido dejar que se enfrié en el caldo de la cocción.
  2. Retirar del caldo y moler. Reservar el líquido de la cocción.
  3. En la mantequilla saltear la cebolla hasta que esté brillosa.
  4. Agregar el harina y revolver vigorosamente, mezclar bien cuidando de que no se queme.
  5. Verter la leche, la nuez-moscada y el líquido de cocción del pollo y mezclar bien. Incorporar el pollo y el perejil moviendo constantemente hasta que la mezcla empiece a despegarse del fondo del caldero.
  6. Dejar enfriar hasta temperatura ambiente.
  7. Tomar porciones de la mezcla y formar las croquetas.
  8. Si la masa se pega de tus dedos enharina tus manos. Pasar las croquetas por el huevo batido y luego por el pan rallado.
  9. Colocarlas en una bandeja cubierta con papel encerado una al lado de la otra y llevarlas al refrigerador por 30 minutos.
  10. Freír en aceite bien caliente hasta que doren.
  11. Retirar del aceite y reservar sobre papel toalla para eliminar el exceso de grasa. Servir.
