Ingredientes

  • 3 tazas de arroz cocido
  • ½ taza de crema de leche
  • 1 taza de queso mozzarella rallado
  • 1 taza queso cheddar rallado
  • 2 tazas de florcitas de brócoli cocidas (bien pequeñas)
  • 1 taza de zanahoria rallada
  • 1 cebolla blanca picadita
  • 2 cucharadas de harina
  • 2 cucharadas de mantequilla
  • ¼ cucharadita de sal
  • Pimienta al gusto

Preparación

  1. Precalentar el horno a 350ºF.
  2. En una sartén saltear con un poco de aceite de oliva la cebolla y luego agregar las florcitas de brócoli y la zanahoria.
  3. Salpimentar y reservar.
  4. En una ollita derretir la mantequilla junto con el harina; agregar la crema de leche, la sal y un toque de pimienta.
  5. Bajar el fuego y dejar espesar.
  6. Cuando inicie a hervir, agregar el queso mozzarella y dejar que el queso derrita.
  7. Retirar del fuego y mezclar con el arroz.
  8. Incorporar el queso cheddar y la mezcla de brócoli, zanahoria y cebolla.
  9. Colocar la mezcla en los huecos del molde de cupcakes previamente engrasados y llevar al horno por unos 10 minutos hasta que el queso derrita.
  10. Retirar del horno, dejar refrescar y servir.
