Ingredientes

  • 1 cucharada de harina
  • ¼ taza de jengibre cristalizado*
  • 1¼ tazas de harina
  • ¾ taza de azúcar
  • 1 cucharadita de bicarbonato de soda
  • ½ cucharadita de polvo de hornear
  • 2 cucharaditas de canela
  • ½ cucharadita de sal
  • ¼ cucharadita de nuez moscada
  • ¾ taza de aceite vegetal
  • 2 huevos
  • 2 cucharaditas de vainilla
  • 1 1/3 tazas de zanahoria rallada
  • 12 onzas de cream cheese a temperatura ambiente
  • 2/3 taza de mantequilla a temperatura ambiente
  • 1 cucharadita de canela en polvo
  • 1 cucharadita de vainilla
  • 5 tazas de azúcar pulverizada cernida
  • 1 taza de jengibre pelado y cortado en lonjas
  • 1½ tazas de agua
  • 1½ tazas de azúcar, más adicional para cubrir

Preparación

  1. Para preparar el jengibre cristalizado, colocar en una olla el azúcar y el agua. Cuando hierva, agregar el jengibre y dejar cocinar a fuego lento por 20 minutos. Luego sacar el jengibre de la olla y pasarlo por un plato con azúcar para recubrirlos. Conservar en un lugar seco y tapado.
  2. Precalentar el horno a 350ºF y preparar moldes de cupcakes para 24 unidades con capacillos.
  3. Para preparar los cupcakes, cernir de manera conjunta la harina, polvo de hornear, baking soda, sal, canela y nuez moscada.
  4. En un bowl, mezclar el aceite, azúcar y vainilla.
  5. Agregar los ingredientes sólidos y mezclar hasta homogenizar.
  6. Por último, agregar la zanahoria rallada y ¼ taza del jengibre cristalizado picado.
  7. Distribuir la mezcla en los capacillos llenándolos hasta 2/3 partes, y llevar al horno por 15-20 minutos o hasta que al introducir un palillo el mismo salga limpio.
  8. Para hacer el glaseado de canela, colocar la mantequilla y el cream cheese en la batidora y batir hasta homogenizar.
  9. Incorporar la vainilla y la canela.
  10. Luego agregar azúcar pulverizada de poco en poco hasta lograr una crema sedosa y sin grumos.
  11. Decorar los cupcakes con el glaseado de canela, un poco de canela en polvo y un trocito de jengibre caramelizado.
  12. Tip: Mezclar el jengibre picado con 1 cucharada de harina para lograr que queden suspedidos en la preparación y no se acumulen en el fondo.
