Cuscús de frutas con hierbas aromáticas

Ingredientes

  • 250 gramos de cuscús
  • 250 gramos de caldo de carne
  • 150 gramos de tomates
  • 160 gramos de mango
  • 120 gramos de manzana
  • Zumo de limón al gusto
  • 80 gramos de cebolla morada
  • 50 gramos de avellanas
  • ½ cucharadita de jengibre en polvo
  • ½ o 1 cucharadita rasa de pimienta negra recién molida
  • 4-6 ramitas de cilantro fresco
  • 8 hojas grandes de albahaca
  • 20 hojas de hierbabuena fresca
  • Sal al gusto
  • Aceite de oliva virgen

Preparación

  1. Poner el caldo en una olla y calentar hasta llegar a ebullición.
  2. Pasarlo a un bol amplio o a una bandeja alta, vertiendo el cuscús en forma de lluvia.
  3. Mezclar con una cuchara para que todo el cuscús se moje; dejar reposar cinco minutos.
  4. Después del reposo mover con una cuchara para que el grano quede bien suelto, y dejar enfriar completamente.
  5. Lavar y pelar los tomates, retirarles las semillas y cortarlos en cuadritos.
  6. Luego lavar y pelar el mango y la manzana, y cortarlos en cuadritos.
  7. Incorporar estos ingredientes al cuscús y mojar con el zumo de limón para que no se oxide.
  8. Cortar la cebolla en brunoise, picar los frutos secos con un cuchillo e incorporar ambos ingredientes al cuscús.
  9. A continuación, espolvorear el jengibre, la pimienta negra y la sal.
  10. Picar bien finas las hierbas aromáticas e incorporarlas al cuscús.
  11. Por último, añadir el aceite de oliva virgen y mezclar bien. ¡Listo para servir!
