Empanadas de yuca

Ingredientes

  • 1 libra de yuca pelada y limpia
  • 1/4 taza caldo de pollo hirviendo
  • 1/2 cucharadita de sal
  • 1 pizca de azúcar
  • Aceite para freír

Preparación

  1. Rallamos la yuca y formamos una pasta uniforme.
  2. La colocamos en un paño limpio y exprimimos hasta sacarle el líquido. Reservamos
  3. Ponemos el caldo de pollo a hervir y agregamos la sal y la pizca de azúcar.
  4. Cuando hierva, agregamos la yuca y movemos constantemente hasta que tome un color más oscuro.
  5. En un pyrex engrasado ponemos la mezcla de la yuca y la dejamos enfriar.
  6. Nos aceitamos las manos y amasamos la mezcla hasta formar una masa elástica.
  7. Tomamos porciones y formamos bolitas de acuerdo al tamaño que queramos las empanadas, y con la ayuda de un rodillo aceitado aplastamos cada bolita hasta obtener una lamina fina.
  8. Rellenamos con lo que queramos; podemos usar carne molida de res, de cerdo o de pollo, y también podemos hacerlas de queso.
  9. Cerramos y sellamos los bordes.
  10. Freímos en abundante aceite hasta dorar.
