Ingredientes

  • 1½ tazas de garbanzos cocidos
  • 1 pepino tipo japonés
  • 2 tomates tipo bugalú
  • 1 cebolla roja
  • 3 cucharadas de perejil liso picado
  • ½ taza de aceitunas negras
  • 1 cucharada de zumo de limón
  • ¼ taza de aceite de oliva
  • 1 diente de ajo grande bien picadito
  • 1 cucharadita de miel

Preparación

  1. Cortamos el pepino longitudinalmente por la mitad, retiramos las semillas y luego lo cortamos en semicírculos.
  2. Cortamos los tomates en cubitos del tamaño de los garbanzos.
  3. Cortamos la cebolla roja en juliana.
  4. En un recipiente, incorporamos los garbanzos con el tomate, la cebolla, las aceitunas y el perejil, y mezclamos todo bien.
  5. Aparte, preparamos el aderezo: Mezclamos el zumo de limón con el ajo, incorporamos la miel y luego el aceite de oliva, y removemos hasta obtener un aderezo cremoso.
  6. Agregamos el aderezo a nuestros garbanzos y mezclamos bien.
  7. Podemos llevar a nevera a refrescar o servimos de inmediato.
