Ingredientes

  • 1 Lata de habichuelas rojas
  • 1 Lata de habichuelas rosadas
  • 3 Tomates tipo bugalú
  • ½ Pimiento morrón amarillo
  • ½ Pimiento morrón rojo
  • 2 Cucharadas de puerro picadito
  • 2 Cucharadas de cilantro picadito
  • Queso parmesano
  • Aceite de oliva
  • Sal y pimienta

Preparación

  1. Drenar las latas de habichuelas y lavar con un poco de agua . Reservar en frío.
  2. Aparte, rallar el tomate y sazonar con sal y pimienta. Picar los pimientos en cubitos bien pequeñitos e incorporar a los tomates rallados. Agregar igualmente el cilantro y puerro picadito.
  3. Agregar esta mezcla a las habichuelas, mezclar suavemente, rociar un poco de aceite de oliva y finalizar con el queso parmesano.
  4. Servir sobre aguacate o acompañar con tortillas chips.
