Ensalada fresca con hongos y aderezo de mostaza

Ingredientes

  • 1 libra de hongos
  • Lechuga dulce o Boston (al gusto)
  • Láminas de queso parmesano
  • Sal y pimienta al gusto
  • 2-3 cucharadas de aceite de canola
  • Aderezo de mostaza:
  • ¾ taza de aceite de oliva
  • 3 cucharadas de vinagre de arroz
  • 1 cucharada de vinagre balsámico
  • 1 cucharadita de mostaza Dijon o Dijon en granos
  • ¼ cucharadita de tomillo seco
  • Sal y pimienta al gusto

Preparación

  1. Para nuestro aderezo, combinamos el aceite de oliva, el vinagre de arroz, vinagre balsámico, mostaza y tomillo. Mezclamos muy bien y por último damos un toque de sal y pimienta.
  2. En una sartén de fondo grueso, agregamos el aceite de canola y los hongos laminados o cortados en cubos, y sazonamos con sal y pimienta.
  3. Cocinamos por unos minutos, retiramos del fuego y colocamos en un plato, dejando drenar sus jugos.
  4. Aparte, cortamos la lechuga, la colocamos en un bol y la bañamos con el aderezo preparado.
  5. Para terminar, agregamos por arriba los hongos ya drenados y escurridos, y las láminas de queso parmesano.
