Ingredientes

  • ½ repollo rebanado finamente
  • 1 remolacha cruda rallada
  • 4 tallos de apio picaditos en cubos
  • 1 aguacate
  • ¼ taza de perejil liso picadito
  • 1 limón
  • 1 diente de ajo
  • 3 cucharadas de aceite de oliva
  • Sal y pimienta al gusto

Preparación

  1. Primero preparamos el aderezo: el ajo lo podemos laminar, triturar o picar pequeñito, y lo mezclamos con el zumo de limón, sal y pimienta.
  2. Luego, poco a poco agregamos el aceite de oliva y unimos bien.
  3. Aparte, mezclamos el repollo laminado, la remolacha rallada, el apio picadito (retirando previamente los hilos característicos de los tallos de apio) y el perejil.
  4. Mezclar bien los vegetales y agregar el aderezo (reservar un poco de aderezo), y volver a mezclar bien.
  5. Cortar el aguacate en 4 o 6 cuñas y bañarlo con un poco del aderezo restante.
  6. Rellenar cada cuña de aguacate con un poco de la ensalada.
