Ingredientes

  • ¼ taza de semillas de calabaza
  • ¼ taza de semillas de girasol
  • 2 cucharadas de semillas de ajonjolí
  • 2 cucharaditas de semillas de comino
  • ¼ col morada rallada
  • 1 zanahoria rallada
  • 1 betabel cocido y rallado
  • 2 tazas de hojas de espinaca
  • 1 cebolla morada
  • ¼ taza de grosellas secas
  • 3 cucharadas de menta fresca
  • Para el aderezo:
  • Jugo de naranja y ralladura fina (al gusto)
  • 3 cucharadas de miel de granada roja
  • 1 cucharada de aceite de oliva
  • Sal y pimienta

Preparación

  1. Tueste las semillas de calabaza, girasol, ajonjolí y comino en una sartén mediana sobre fuego medio, de 3 a 5 minutos o hasta dorar.
  2. Mezcle la col morada, la menta y las semillas tostadas en una ensaladera grande.
  3. Para preparar el aderezo, en un tazón pequeño y usando un batidor globo, bata el jugo de naranja, la ralladura, miel de granada roja y aceite.
  4. Vierta el aderezo sobre la ensalada y mezcle; luego sazone con sal y pimienta.
