Espinaca salteada con huevos poché

Ingredientes

  • 1½ libras de hojas de espinaca bebé
  • 3 cucharadas de aceite de oliva
  • 6 dientes de ajo picaditos
  • 2 cucharaditas de sal
  • ¾ cucharadita de pimienta
  • 1 limón
  • Semillitas de girasol (opcional)
  • 4 huevos

Preparación

  1. En una sartén cocinar el ajo con el aceite de oliva por 1 minuto a fuego bajo. Evitar que se quemen.
  2. Agregar la espinaca, sal y pimienta, mover un poco y tapar. Cocinar por 2 minutos.
  3. Agregar el zumo de limón y comprobar sal y pimienta.
  4. Por último, incorporar las semillitas de girasol. Reservar.
  5. Para hacer los huevos (si no tiene una ollita para huevos poché), llevar al fuego una ollita con agua y vinagre blanco y dejar hervir.
  6. Abrir un huevo y colocarlo en una tacita; luego hacer un pequeño remolino en el agua hirviendo y echar el huevo en el agua hasta que cuaje (por aproximadamente 1:45 a 2:00 minutos). La clara debe quedar dura y la yema blanda.
  7. Repetir el proceso con cada huevo.
  8. Para servir, en un plato colocamos las espinacas salteadas y sobre estas los huevos poché.
  9. Podemos finalizar con pimienta fresca recién molida.
