Filete de Res Sellado con Espárragos

Ingredientes

  • 1 Filete de res
  • 2 Cucharadas de romero fresco picado
  • 2 Cucharadas de tomillo fresco picado
  • 2 Cucharadas de perejil liso picado
  • 1 Diente de ajo
  • 4 Cucharadas de aceite de oliva
  • 1 Cucharada de mantequilla
  • Sal y pimienta al gusto
  • 12 Espárragos frescos cortados
  • Aceite de trufas (opcional)

Preparación

  1. Mezclamos el tomillo, romero, perejil y ajo picadito con el aceite de oliva, y sazonamos el filete de res con esta mezcla.
  2. En una sartén a fuego medio, colocamos una cucharada de aceite de oliva y una de mantequilla, y cocinamos el filete de res por todos lados.
  3. Según el término que se desee, se puede terminar de cocinar en la sartén o llevar a horno. Cuando esté listo, retirar y dejar reposar.
  4. Agregamos el vino a la sartén para desglasarla, dejamos evaporar y luego incorporamos los espárragos con un poco de la mezcla de hierbas. Salteamos y damos un toque de sal y pimienta.
  5. Ya reposado, laminamos el filete, le colocamos por arriba los espárragos y, opcional, unas gotas de aceite de trufas.
