Ingredientes

  • 5 hongos portobello
  • 1 taza de quínoa cocida
  • 1 paquete de brotes de soja
  • 3 pimientos (rojo, amarillo y verde) picados en cuadritos
  • 1 cebolla picadita
  • 1 tomate de ensalada picadito
  • 1 diente de ajo triturado
  • 1/2 cucharadita de orégano
  • Pizca de sal
  • Chorrito de aceite de oliva
  • 2 cucharadas de salsa de soja

Preparación

  1. Limpiamos bien los hongos, retiramos el bastoncito de adentro y reservamos ambos.
  2. Hacemos una mezcla con la salsa de soja, aceite de oliva, sal y orégano, y untamos bien los hongos con la ayuda de una brocha.
  3. En una sartén colocamos la quínoa ya cocida y mezclamos con los brotes de soja, pimientos cortados en cuadritos pequeños, el tomate, los bastoncitos de los hongos picaditos y la cebolla.
  4. Salteamos con orégano, ajo, sal y salsa de soja.
  5. Cuando estén listos, rellenamos los hongos con la mezcla y llevamos al horno por 15 minutos a una temperatura de 350ºF.
