Ingredientes

  • 4 Huevos
  • 4 Rebanadas de jamon ahumado
  • 4 Rebanadas de pan
  • 2 Cucharadas de vinagre blanco
  • 4 Tazas de agua
  • 3 Yemas de huevo
  • 1 Barrita de mantequilla sin sal
  • 1 Cucharada de agua
  • ½ Cucharada de zumo de limón
  • ¼ De cucharadita de mostaza
  • ¼ De cucharadita de salsa inglesa
  • Sal y pimienta al gusto

Preparación

  1. PARA LOS HUEVOS: Colocar en la hornilla una ollita con agua y vinagre blanco. Cocinar cada huevo, uno por uno.
  2. Romperlo en una tacita aparte, hacer un pequeño remolino en el agua y colocarlo dentro hasta que cuaje (por aproximadamente dos minutos). La clara debe quedar dura y la yema blanda. El agua no debe hervir.
  3. Colocar una rebanada de jamón sobre cada rebanada de pan (se puede untar un poco de mantequilla a cada pan).
  4. Colocar un huevo sobre cada pan.
  5. Finalmente, añadir una y media cucharada de salsa holandesa.
  6. Adornar con una hojita de perejil.
  7. PARA LA SALSA HOLANDESA: Colocar en el vaso de la licuadora el jugo de limón, la sal y pimienta, la mostaza, la salsa inglesa y las yemas de huevo.
  8. Derretir la mantequilla en una olla.
  9. Licuar y agregar, poco a poco, la mantequilla derretida, hasta que la salsa espese.
