Ingredientes

  • 1 cucharada de aceite de oliva o mantequilla
  • 2 tazas de papa picada en cubos
  • 2 tazas de batata picada en cubos
  • 1 cucharadita de sal y pimienta, o al gusto
  • ½ cucharadita de páprika
  • 1 cucharadita de pimentón
  • 2 tazas de kale picado
  • 1½ tazas de puerro finamente picado
  • 4 huevos
  • Aceite para freír

Preparación

  1. En una sartén grande con tapa, sofreír las papas y la batata en el aceite de oliva a temperatura media-baja.
  2. Cocinar tapadas por espacio de 20 a 30 minutos, hasta que las papas queden suaves. Mover ocasionalmente para evitar que se peguen a la sartén.
  3. Sazonar con sal, pimienta, páprika y pimentón.
  4. Mientras, en otra sartén con 3 cucharadas de agua, cocinar el kale al vapor por espacio de 5 minutos; luego, adicionar el puerro picado y terminar de cocinar al vapor por 1 minuto más.
  5. Retirar de la sartén y reservar.
  6. En la sartén donde se cocinó el kale, freír los huevos uno a uno.
  7. Cuando las papas y las batatas estén cocidas, agregar el kale y el puerro reservados. Por último, colocar los huevos fritos encima. Servir de inmediato.
  9. Tip: Los vegetales se pueden variar con otros de su preferencia.
