Ingredientes

  • 1 Auyama pequeña
  • 3 Cucharadas de zumo de limón
  • 4-5 Cucharadas de tahini
  • 1 Diente de ajo asado
  • 4-5 Cucharadas de aceite de oliva
  • Sal y pimienta al gusto
  • Perefil fresco
  • Semillas de auyama o girasol tostadas

Preparación

  1. Precalentar el horno a 375 grados. Pelar la auyama, cortar en trozos y colocar en una bandeja para hornos, previamente forrada con papel de aluminio.
  2. Agregar 3 cucharadas de aceite de oliva a los trozos de auyama y mezclar. Colocar sobre la bandeja, dar un toque de sal y llevar al horno por 30 minutos. La idea es que la auyama esté tierna y ligeramente caramelizada. Dejar enfriar a temperatura ambiente.
  3. Luego procesar la auyama junto con el tahini, el ajo asado*, un toque de sal, pimienta y el zumo de limón. Si se desea que el hummus tenga más suavidad, se puede agregar un poco de agua o aceite de oliva.
  4. Al momento de servir agregar un poco de aceite de oliva* un toque de pimentón dulce (opcional), perejil picadito y las semillas de auyama tostada.
  5. Servir con pan pita, galletas o pan.
