Jamón al horno con manzanas y Romero

Ingredientes

  • 1 pierna de jamón
  • 4 dientes de ajo
  • 1/2 cebolla
  • 3 unidades de pimienta gorda
  • 5 bolitas de malagueta
  • 5 clavos de olor
  • 1 raja de canela
  • 1/2 taza de mermelada de piña reducida en azúcar
  • 1/4 taza de vinagre de manzana
  • 1/2 taza de jugo de naranja
  • 1 pizca de sal
  • 5 manzanas
  • 1 rama romero

Preparación

  1. Precalentar el horno a 200°C.
  2. Asar en una plancha ajo, cebolla, pimienta, clavo y canela, y pasarlos a la licuadora junto con la mermelada de piña, vinagre, sal y jugo de naranja; procesar hasta obtener una salsa homogénea.
  3. Colocar el jamón en una charola para horno, barnizarlo con el adobo y hornear a 160°C. Volver a barnizar de vez en cuando para evitar que el jamón se seque. Acomodar las manzanas alrededor junto con la rama de romero y cocinarlas hasta que estén suaves.
