Ingredientes

  • 1 ½ Libra de camarones frescos (pelados y limpios)
  • 1 ½ Taza de leche de coco
  • 2 Cucharadas de azúcar
  • 2 Cucharadas de zumo de limón
  • 4 Cucharadas de curry en polvo
  • 1 Cucharadita de fécula de maíz
  • 2-3 Cucharadas de aceite de coco
  • ¼ De cucharadita de sal
  • 1/3 De taza de hojas de cilantro
  • Pasta larga
  • Sal y pimienta al gusto

Preparación

  1. En un recipiente, sazonar los camarones con 1 cucharada de aceite de coco, 2 cucharadas de curry, sal y pimienta.
  2. En una sartén a fuego medio, agregar el resto del aceite de coco, dejar calentar e incorporar los camarones, saltear y agregar el anís. Dejar cocinar por unos minutos y luego reservar.
  3. Mezclar la leche de coco, el azúcar, el zumo de limón, el curry, la fécula de maíz y la sal. Llevar a hervir, reducir el fuego y dejar reposar en el calor por unos 5 minutos. Apagar el fuego, retirar  e incorporar la pasta previamente cocida y finalmente agregar el cilantro en hojas.
  4. Para servir hacer un nido con la pasta y sobre esta colocar los camarones y un poco más de hojas de cilantro.
  5. También se pueden mezclar los camarones directamente con la pasta.
