Pasta en salsa de tomate y nueces (Para antes de correr)

Ingredientes

  • 1 paquete de pasta (preferiblemente larga e integral)
  • 1 lata de tomates
  • 2 cucharadas de aceite de oliva
  • 1 cebolla blanca picada
  • 1 tallo de apio
  • 1 zanahoria rallada
  • 2 cucharadas de perejil liso picado
  • 1 cucharadita de vinagre
  • ½ taza de nueces troceadas y tostadas
  • Queso parmesano rallado para servir (opcional)

Preparación

  1. En una sartén colocamos el aceite de oliva y cocinamos a fuego bajo la cebolla y el apio por unos 5 minutos.
  2. Luego agregamos los tomates (un poco triturados), la zanahoria, el perejil y el vinagre.
  3. Dejamos que hierva y reducimos el fuego para que se consuman un poco los líquidos y espese la salsa.
  4. Entretanto, ponemos a cocinar nuestra pasta según las instrucciones. Colamos y volvemos a llevar a la olla de cocción.
  5. Agregamos la salsa de tomate y de inmediato las nueces tostadas, mezclamos bien y servimos enseguida con un poco de queso parmesano rallado por arriba (opcional).
