Ingredientes

  • 8 guineos verdes pelados y guayados
  • 5 rulos pelados y guayados
  • 2 plátanos verdes pelados y guayados
  • 3 libras yautía blanca pelada y guayada
  • 2 tazas de leche
  • 4 cucharadas de bija en granos
  • Sal
  • Aceite
  • 2 libras de bacalao desalado y desmenuzado
  • 1 lata pimientos ahumados picaditos
  • 2 cebollas picaditas
  • 2 cucharadas salsa de tomate
  • 1 cucharadita alcaparritas
  • Hojas de plátano
  • Gangorra

Preparación

  1. Ponemos la bija en el aceite y sofreímos por unos 15 minutos a fuego bajito, luego colamos y descartamos los granos de bija.
  2. Mezclamos bien todos los víveres rallados.
  3. Agregamos la leche y una parte del aceite con bija colado (la otra parte la reservamos para untar a las hojas de plátano).
  4. Mezclamos todo bien y añadimos la sal.
  5. Cocinamos de manera habitual el bacalao con la cebolla picadita, los pimientos ahumados, salsa de tomate y alcaparritas.
  6. En una olla ponemos agua a hervir y pasamos las hojas de plátano para que se mareen un poco.
  7. Luego procedemos a ensamblar los pasteles:
  8. Ponemos un poco del aceite con bija en la hoja de plátano y distribuimos bien con la ayuda de una cuchara
  9. luego agregamos una porción de la masa, le ponemos el relleno en el centro y colocamos otra porción de la masa encima.
  10. Procedemos a cerrar el pastel envolviéndolo con las hojas de plátano y amarrándolo con la gangorra.
  11. Repetimos este proceso hasta terminar con toda la masa y los llevamos al refrigerador.
  12. Dejamos que se compacten y luego los cocinamos en agua hirviendo con sal por unos 30 minutos.
  13. Si no se van a utilizar ese día, deben llevarse al congelador.
