Ingredientes

  • 1 Libra carne de res ripiada (falda)
  • ¼ Taza de aceite
  • 1 Manojo puerro picado
  • 12 Tomates bugalú maduros (pelados)
  • 1 Lata crema de maíz
  • Sal de especias al gusto
  • Sal y pimienta al gusto
  • 1 Taza yogurt natural
  • ½ Taza harina de maíz
  • 3 Claras y una yema de huevo
  • ½ Taza aceitunas rellenas
  • 1 Cajita de pasas
  • ¼ Taza de fondo mixto (res y pollo)
  • 1 Libra de queso Cheddar rallado

Preparación

  1. Salpimentar la carne, poner a hervir con cebolla y ajo.
  2. Dejar refrescar, desmenuzar y reservar.
  3. En un caldero, sofreír puerro, tomates, crema de maíz y sal de especias; cocinar por espacio de 5 minutos, adicionar la carne y dejar 2 minutos más.
  4. En otro envase, mezclar el yogurt, la harina, el fondo de carnes y los huevos, y añadir a la mezcla anterior.
  5. Dejar cocinar hasta que todo se integre, adicionar las pasas y mover.
  6. Si la mezcla está muy espesa o medio fuerte, adicionar fondo de vegetales caliente, mover y dejar al fuego un minuto.
  7. Verter la mezcla en un molde refractario, cubrir con queso y llevar al horno por 40 minutos, aproximadamente, a 350ºF.
