Ingredientes

  • 4 libras de pescado de su preferencia
  • Sal al gusto
  • 3 dientes de ajo
  • Pimienta al gusto
  • Queso parmesano rallado
  • 1 cebolla morada cortada finamente
  • Aceite de oliva
  • 2 dientes de ajo triturados
  • 10 aceitunas negras picaditas
  • 4 tomates deshidratados
  • 1 cucharada de azúcar morena
  • 1 taza de concentrado de tomate
  • 1 cucharadita de alcaparritas
  • 1 cucharada de perejil picadito
  • Sal y pimienta al gusto

Preparación

  1. Sazonamos el pescado con sal, pimienta, el ajo triturado y un chorrito de aceite de oliva.
  2. Cocinamos en el horno por 15 minutos a 180ºC.
  3. Para la salsa: En una sartén ponemos la cebolla y el ajo a sofreír hasta que transparenten, y luego añadimos aceitunas, tomates deshidratados cortados finamente, azúcar, perejil, alcaparritas, concentrado de tomate, sal y pimienta.
  4. Mezclamos bien y dejamos cocinar por 7 minutos.
  5. Servimos el pescado bañado con esta salsa, y esparcimos por encima el queso parmesano rallado.
