Pierna de cerdo mechada

Ingredientes

  • 1 pierna de cerdo de 10 libras
  • 6 dientes de ajo
  • 1 cebolla
  • Sal y pimienta
  • 2 tazas de sidra
  • 1/2 taza de almendras
  • 1/2 taza de piñones
  • 15 a 20 ciruelas pasas sin hueso
  • 1 lata grande de piña rebanada

Preparación

  1. Mechar bien la pierna y colocar en un recipiente.
  2. Licuar ajo, sal y pimienta, cebolla y 1 taza de sidra.
  3. Verter sobre la pierna, tapar y dejar marinar en la nevera unas 6 horas, mínimo.
  4. Precalentar el horno a 200ºC.
  5. Colocar la pierna en un pyrex, introducir las almendras, piñones y ciruelas, e inyectar con la sidra restante.
  6. Untar toda la pierna con la manteca, colocar las rebanadas de piña sobre la carne y cubrir con papel de aluminio.
  7. Hornear por 6 horas.
  8. Mezclar la marinada con el almíbar de la piña y bañar varias veces durante la cocción.
  9. Retirar el papel de aluminio los últimos 30 minutos para dorar.
