Ingredientes

  • 2 piernas de cordero
  • 1 cucharadita de romero
  • 1 cucharadita de tomillo
  • 2 cucharaditas de orégano
  • 1 cucharadita de pimienta negra recién molida
  • 4 dientes de ajo
  • 1 cucharada de mezcla de pimentón dulce y picante
  • 1 cucharadita de comino
  • 1 cucharadita de albahaca
  • 1 cucharadita de perejil
  • 1 cucharadita de cardamomo
  • 1/2 cucharadita de canela
  • 1 cucharadita de mostaza
  • 1/2 cucharadita de clavo dulce
  • 6 onzas de oporto
  • Aceite de oliva extra virgen

Preparación

  1. Precalentar el horno a 200ºC.
  2. Limpiar las piernas y quitar los excesos de grasa.
  3. Hacer dos incisiones a cada pierna.
  4. Triturar el ajo y mezclar todas las especias con sal y un poco del aceite de oliva.
  5. Frotar las piernas con la mezcla en forma de masaje e introducir bien en las incisiones.
  6. En una bandeja con aceite de oliva llevar las piernas al horno, bajando la temperatura a 185ºC.
  7. Voltear la carne cada 20 minutos y continuar el asado por unos 60 a 80 minutos.
  8. A mitad de cocción, añadir el oporto.
  9. La carne está lista cuando se desprende del hueso.
