Ingredientes

  • 1 Libra de pechugas de pollo (cortadas en cubos)
  • 1 Taza de zanahorias cortadas en rodajas
  • 1 Taza de cebolla roja (cortadas en cubos)
  • 1 Unidad de Pimientos de cada uno (rojo, amarillo y verde cortado en cubos)
  • 1 Taza de piña (cortada en cubos)
  • 3 Cucharadas de aceite vegetal o de maní
  • 2 Dientes de ajo (machacados)
  • 2 Cucharadas de jengibre picadito
  • Sal y pimienta al gusto al gusto
  • Harina y fécula de maíz
  • ¼ Taza de caldo de pollo
  • ½ Taza jugo de piña
  • 2 Cucharadas de maicena
  • 2 Cucharadas de pasta de tomate
  • 2 Cucharadas de salsa de soya
  • 3 Cucharadas de vinagre de arroz
  • ¼ Taza de azúcar (preferiblemente morena)
  • ½ Cucharadita de sal
  • 1 Cucharadita de aceite de ajonjolí
  • ¼ Cucharadita de jengibre picadito

Preparación

  1. En un wok o sartén grande, primero cocinamos por un par de minutos el pollo, con una cucharada de aceite vegetal. Para preparar el pollo mezclamos a cantidades iguales un poco de harina con la fecula y salpimentamos. Pasamos los cubos de pollo por esta mezcla, retiramos el exceso de harina y pasamos a cocinar al wok.
  2. Retiramos y dejamos calentar el wok o sartén a fuego alto. Luego bajamos el fuego y agregamos 2 cucharadas de aceite vegetal, agregamos, el ajo, jengibre y una pizca de sal. Agregamos los vegetales (Comenzando siempre con los vegetales de mayor cocción) Zanahoria, cebolla y pimientos ), dejamos cocinar hasta que estén tiernos y crujientes (algunos 2 minutos).
  3. Incorporamos el pollo y la piña y dejamos cocinar por unos 3 minutos mas, (siempre a fuego medio).
  4. Luego agregamos la salsa. Mezclamos y dejamos espesar.
