Quínoa dulce con manzana y canela

Ingredientes

  • ½ barra de mantequilla (¼ taza)
  • 4 manzanas verdes (peladas, sin semillas y cortadas en cubos medianos)
  • 1½ cucharaditas de canela en polvo
  • ¼ cucharadita de sal
  • ¼ cucharadita de malagueta
  • 1½ tazas de quínoa
  • ½ taza de azúcar morena
  • 4 tazas de jugo de manzana
  • 1 cucharadita de vainilla
  • Almendras laminadas (opcional)
  • Cranberries o pasas (opcional)

Preparación

  1. Derrita la mantequilla en una ollita a fuego medio.
  2. Agregue las manzanas, canela, sal y malagueta, y cocine de 3 a 5 minutos.
  3. Agregue la quínoa y mezcle bien.
  4. Espolvoree el azúcar morena y agregue el jugo de manzana y la vainilla. Deje cocer a fuego medio hasta que hierva, luego baje el fuego y tape.
  5. Deje cocinar por unos 15 a 20 minutos, moviendo de vez en cuando y revisando qué tanto líquido va quedando en la olla. Puede ser que necesite algunos minutos más.
  6. Compruebe la cocción de la quínoa y si tiene mucho líquido y ya está cocida, suba el fuego. Si, por el contrario, se siente cruda y tiene poco líquido, puede agregar un ¼ taza de agua.
  7. Luego de cocida, retire y sirva caliente, y esparza por arriba almendras laminadas y/o cranberries y pasas.
