Risotto con Hongos

Ingredientes

  • 4 Cucharadas de mantequilla
  • ½ Cebolla (picada)
  • 2 Tazas de hongos (frescos cortados)
  • ½ Taza vino blanco
  • 3 Tazas de consomé de pollo o vegetales
  • 1 Taza de queso parmesano rallado
  • ¼ De taza de crema de leche
  • 1 Taza de arroz arborio
  • Sal y pimienta al gusto

Preparación

  1. En una olla colocar la mantequilla y agregar la cebolla picada. Dejar cocer hasta que estas se ablanden, agregar los hongos cortados en láminas y la ½ taza de vino. Se deja evaporar el vino por lo menos unos 2 minutos.
  2. Luego se agrega el arroz y se mezcla bien, se agrega sal pimienta al gusto.
  3. Cuando el arroz absorba el vino, entonces comenzar a agregar el consomé, se va agregando poco a poco (incluso puede pasar que se necesite más de la cantidad mencionada o menos) se va agregando en porciones de ½ taza cada vez, cuando se esté consumiendo el líquido. Este proceso puede durar alrededor de 25 minutos.
  4. Ya por último agregar el queso parmesano y la crema de leche. Comprobar sal y pimienta.
  5. Servir al dente. Se pueden agregar hongos laminados salteados, un toque de aceite de trufas y más queso parmesano al momento de servir.
