Rollitos de Zucchini con Ensalada Romana

Ingredientes

  • 2 Zucchinis
  • 1 Cabeza de lechuga romana
  • 5 Lonjas de jamón cocido
  • 5 Lonjas de queso tipo gouda (manchego)
  • 4-5 Aceitunas tipo Kalamata
  • 1 1/2 Cucharada de alcaparras (preferiblemente baby)
  • 1 Cucharada de cilantro picadito
  • 1/3 De taza aceite de oliva
  • Sal y pimienta al gusto

Preparación

  1. Lonjear los zucchinis de un grosor en el que sean flexibles (para enrollar).
  2. Trocear la lechuga y cortar el jamón y el queso en tiras. Reservar.
  3. Aparte, picar las aceitunas y la mitad de las alcaparras.
  4. Agregar ambas a un recipiente, incorporar el cilantro picado, agregar un toque de sal y pimienta (si se desea se puede usar un poco de hojuelas de cayena), mezclar y agregar el aceite de oliva. Reservamos.
  5. Armar los rollos colocando una lámina de zucchini, unos trozos de lechuga y unas tiras de jamón y queso. Agregamos un poco de aderezo y enrollamos.
  6. Al momento de servir, agregamos un poco de aderezo sobre el zucchini y decoramos con las alcaparras fritas.Para freír las alcaparras. Agregar un poco de aceite en una sartén, dejar calentar y agregar las alcaparras (previamente secas). Dejamos dorar y retiramos colocando sobre un papel toalla absorbente.
