Rollo de pechuga con uvas y frutos secos

Ingredientes

  • 1 pechuga de pavo deshuesada
  • 1 ½ tazas de higos deshidratados
  • 1 ½ tazas de nueces picadas
  • 2 tazas melocotón
  • 2 tazas de ciruelas pasas sin hueso
  • 1/2 pan de mantequilla
  • 2 ramitas tomillo
  • 2 tazas de uvas
  • 1 taza crema de leche
  • 1 taza de oporto
  • mantequilla
  • Sal y pimienta al gusto

Preparación

  1. Ponga a hervir los higos, las ciruelas, el tomillo y las uvas.
  2. Tapar y cocinar a fuego medio hasta que ablanden.
  3. Cuele y reserve el agua de la cocción.
  4. Picar los frutos cocidos y el melocotón, y mezclar con las nueces y el pan; reserve.
  5. Abra la pechuga en forma de mariposa, coloque sobre una superficie pareja con la piel hacia abajo, séquela y condimente con sal y pimienta.
  6. Colocar toda la mezcla a lo largo de la pechuga formando un cilindro.
  7. Enrolle la carne cuidando que el relleno quede en el centro y amarre con la malla que trae.
  8. Luego frote el pavo con mantequilla y colóquelo en un pyrex.
  9. Precalentar el horno a 200ºC y dorar por 15 o 20 minutos.
  10. Luego bajar la temperatura a 170ºC y cocinar por 30 minutos o hasta que esté cocido.
  11. Para la salsa, en una olla ponga el oporto y cocine hasta que el alcohol evapore.
  12. Agregue 2 tazas del líquido de cocción de los frutos y deje reducir hasta un tercio, y agregue la crema de leche hasta obtener consistencia.
  13. Salpimentar y servir junto a la carne.
