Rollos de pechuga de pavo

Ingredientes

  • 4 filetes grandes de pechuga de pavo
  • 4 lonjas de jamón serrano
  • 4 lonjas de queso de su preferencia
  • 2 manzanas
  • 1 puñado de ciruelas pasas sin semillas
  • 1 puñado de pasas rubias
  • 1 puñado de nueces
  • 1 vaso de vino blanco
  • 1 chorrito de brandy
  • Aceite
  • Sal y pimienta al gusto
  • 1 manzana
  • 4 cucharadas de mantequilla
  • 1 cucharadita de canela molida

Preparación

  1. Precalentamos el horno a 220ºC.
  2. Estiramos la carne y la salpimentamos.
  3. Cubrimos con una lonja de queso y otra de jamón.
  4. Añadimos encima las pasas, las ciruelas cortadas por la mitad y las nueves troceadas.
  5. Terminamos con la manzana cortada en juliana y enrollamos con cuidado la pechuga sobre sí misma.
  6. Atravesamos el rollo de pechuga con unos palillos para evitar que se abra, y luego, en una sartén con un chorrito de aceite, sellamos los rollos de pavo.
  7. Una vez sellados, los horneamos durante 10 minutos a 350ºF. Para la guarnición, en una sartén caliente, ponemos a reducir el vino blanco y el brandy, y añadimos un poco de pimienta.
  8. Una vez reducido el alcohol, retiramos los palillos, añadimos la salsa de vino y volvemos a hornear 5 minutos más.
  9. Por otro lado, troceamos una manzana y la salteamos en una sartén con un poco de mantequilla y canela.
  10. Emplatamos una cama de la manzana con canela.
  11. Cortamos los rollos de pavo, los disponemos sobre la cama de manzana y servimos.
