Salami caramelizado con miel de cítricos y canela

Ingredientes

  • 1 libra de salami en ruedas o cuadritos
  • 1 naranja (ralladura y jugo)
  • 1 cucharadita de jengibre
  • 1 limón (un chorrito y ralladura)
  • 1 ralladura de mandarina
  • 1 rama de canela
  • 1 tallo de tomillo fresco
  • 1/2 taza de miel
  • 1/2 taza de azúcar morena
  • 2 cucharadas de aceite

Preparación

  1. En una sartén colocar las rodajas de salami con la cucharada de aceite a fuego medio hasta dorar.
  2. Reservar.
  3. Aparte, en una olla colocar el azúcar con la ralladura de cítricos y el jengibre, y cocinar a fuego medio hasta tener un caramelo.
  4. Agregarle los jugos de naranja y limón, dejar reducir por unos minutos y agregar la canela y la miel; cocinar hasta obtener de nuevo un lindo espesor como de caramelo.
  5. Volvemos a calentar el salami en la sartén y agregamos la miel de cítricos caramelizada con las hojitas de tomillo para perfumar; reducimos un poco y servimos.
