Salmón con pesto de pistacho

Ingredientes

  • 1 Lomo de salmón
  • ½ Taza de pistachos
  • 1 Taza de hojas de albahaca
  • ½ Taza de aceite de oliva
  • ¼ Taza de queso parmesano rallado
  • Sal y pimienta al gusto
  • Aceite de sésamo

Preparación

  1. Sazonamos el salmón con un poco de sal, pimienta y aceite de oliva.
  2. Colocamos en una placa o un molde y llevamos al horno a cocinar por unos 15 minutos o más, dependiendo el grosor del mismo.
  3. Primero tapamos unos 7 minutos con papel de aluminio.
  4. Y los últimos 7 minutos sin el papel de aluminio.
  5. Para el pesto, colocamos los pistachos con las hojas de albahaca en un procesador y damos un leve toque de sal y pimienta.
  6. Procesamos y vamos agregando el aceite de oliva en forma de hilo.
  7. Luego incorporamos el queso parmesano y volvemos a procesar.
  8. Al final, puede agregar un toque de aceite de sésamo según su gusto.
  9. Para servir, colocamos un poco del pesto de pistacho sobre el salmón.
  10. Se puede servir también con el salmón cortado tipo sashimi o hacer un tartare con el mismo.
  11. Para este último, puede agregar algo de acidez con un poco de vinagre de arroz.
