Ingredientes

  • 5 onzas de azúcar
  • 2 cucharadas soperas de agua
  • 2 onzas de almendras enteras sin pelar
  • 3 huevos grandes
  • 3½ onzas de leche
  • 2 cucharadas licor de café
  • 3 cucharadas de gelatina sin sabor
  • 2 cucharadas de agua
  • 1/4 taza crema de leche
  • Almendras en lascas tostadas para adornar

Preparación

  1. Disolver el azúcar en el agua y agregar las almendras.
  2. Llevar al fuego a hervir y dejar hasta que haya adquirido un tono dorado.
  3. Servir sobre una plancha metálica o de mármol engrasada con aceite, y cuando la pasta esté fría se aplasta con un rodillo.
  4. Las yemas de huevo, la leche y el licor de café se ponen en una olla o flanera a baño de maría, se deja cocer hasta que espese, sin dejar de mover.
  5. Añadimos entonces la gelatina disuelta en 2 cucharadas de agua, y la mezcla se deja enfriar hasta que esté medio cuajada.
  6. La crema de leche se introduce en la mezcla de huevo con la pasta de almendras y luego se agregan las claras batidas a punto de nieve.
  7. Se vierte en un molde de souflé y se deja en la nevera para que termine de cuajar.
  8. Decoramos con las lascas de almendras tostadas.
