Ingredientes

  • ½ libra de filete de res (picado bien chiquito)
  • 1 cucharada de picadillo de trufas (opcional)
  • 4 cucharadas de cebolla roja finamente picada
  • 2 cucharadas de alcaparras finamente picadas
  • 2 cucharadas de perejil liso, finamente picado
  • 1 cucharada de mostaza (normal o dijon)
  • 1 cucharada de salsa inglesa
  • 1 cucharada de zumo de limón (o más al gusto)+F4
  • Salsa picante (opcional) y al gusto
  • Sal y pimienta al gusto.
  • NOTA: al momento de servir puede rociar un poco de aceite de oliva o trufas y servir con huevitos de codorniz.

Preparación

  1. Coloque el filete bien picadito en un recipiente, agregue las alcaparras y la cebolla. Mezcle todo bien. Luego agregue el picadillo de trufas.
  2. Prepare un vinagreta con la mostaza, limón y salsa inglesa, emulsione con el aceite de oliva. Agregue mas limón a gusto y luego salpimenté.
  3. Agregue la vingreta a la carne y mezcle. Compruebe sabores y ajuste a su gusto.
  4. Por arriba agregue un poco de aceite de trufas y coloque ½ huevito de codorniz, ya sea crudo o cocido.
  5. También puede hervir el huevo y rallarlo.
  6. Servir con tostadas, galletas o papitas chips.
