Ingredientes

  • 2 Tazas de harina
  • 1 Barra de mantequilla
  • 1 Pizca de sal
  • 7 Cdas. de agua fría
  • 1 Taza de espinaca cocida y picada
  • ¼ Barra de mantequilla
  • 2 Cdas. de harina
  • 1 Taza de leche
  • ¼ De libra de jamón cocido rallado
  • 1 Libra de ricota
  • 3 huevos batidos
  • ½ Taza de queso rallado
  • Sal y pimienta

Preparación

  1. Combinar el harina, la mantequilla y la sal hasta lograr una masa grumosa.
  2. Agregar el agua gradualmente hasta que se tenga una masa manejable.
  3. Formar un bollo, deja reposar en la nevera por unos 20 minutos.
  4. Aparte, combinar los ingredientes del relleno y reservar.
  5. Extender la masa en un molde desmontable de 23 cm.
  6. Colocar encima un papel encerado y luego habichuelas crudas para hacerle peso, llevar al horno a 350 °F por 15 minutos.
  7. Retirar la masa del horno y quitar el papel con las habichuelas, verter los ingredientes del relleno, llevar de nuevo al horno a la misma temperatura por 35 minutos o hasta que al introducir un palito en el centro salga limpio y el tope esté dorado.
  8. Retirar, dejar reposar y servir.
