Ingredientes

  • 1 Paquete de pasta de soba o fideos chinos
  • 8 Onzas de tofu firme, drenando y prensado
  • 2 Cucharadas de aceite vegetal o de girasol
  • 1 Pimiento morrón rojo cortado en juliana (fina)
  • 10 Baby corn cortados en diagonal
  • 3 Tazas de hojas de espinaca o bok choy
  • Sal al gusto
  • 3 Cucharadas de aceite de salsa soya
  • 3 Cucharadas de mirin
  • 3 Cucharadas de miel, agave o azúcar morena
  • 1 Cucharada de fécula de maíz
  • 1 Cucharada de jengibre fresco rallado
  • 2 Ajos majados
  • 1 Taza de agua

Preparación

  1. Cortar el tofu en tiras o cubos, secar bien con un papel absorbente y sellar por ambos lados en una sartén o wok caliente a temperatura media, con un poco de aceite en el fondo. Cocinar de 2 a 3 minutos por lado, sin mover. Luego retirar y reservar.
  2. Para la salsa, mezclar en un bowl la soya con el mirin, la miel, la fécula de maíz, el jengibre y el ajo. Luego agregar el agua y volver a mezclar. Reservar.
  3. En un wok o sartén de fondo grueso añadir el aceite, dejar calentar e incorporar los pimientos y el maíz, saltear por unos 3 minutos. Luego agregar la espinaca o el bok choy y saltear por 2 minutos más.
  4. Incorporar la salsa, moviendo constantemente para lograr que espese.
  5. Agregar los fideos, agregar el tofu y saltear por 2 minutos más.
  6. Servir de inmediato.
  7. Al momento de servir se puede agregar semillas de sésamo y/o puerro picadito.
